Ingredients:
1 1/2 cups quinoa, cooked
1/4 cup cucumber, chopped
2 tbsp carrots, shredded
1/4 cup black beans
1/4 cup cherry tomatoes, chopped
2 tbsp onions, chopped
1/2 avocado, pitted and peeled
2 tbsp corn niblets
Handful shredded lettuce (optional)
Tahini Lime Dressing:
1/4 cup tahini
1 tbsp lime juice
1 tbsp rice vinegar
1 tbsp soy sauce
1 tsp honey (optional)
