Nutrition Tuesday: Baked Egg Bites

Establishing healthy eating habits at home is a key component in improving your on-ice performance. Feeding your body with the fuel needed for every shift will help you seamlessly transition back to the ice when the time comes. Every Tuesday, nutritionist Seanna Thomas will be bringing you recipes and nutrition tips via the GTHL Instagram that will help to build healthy routines. For Tuesday, May 12, Seanna will be making Baked Egg Bites.

Baked Egg Bites

Ingredients:
4 eggs
2 tbsp chopped onion
2 tbsp chopped tomato
2 tbsp chopped spinach
1 tbsp shredded cheddar cheese
Salt and Pepper to taste

Preheat oven to 350. Whisk eggs and add vegetables. Pour into a greased muffin tin and bake for 15-20 minutes, until set. Enjoy! Put leftovers in a sealed container in the fridge for the week or freeze. Makes 6. Double the recipe to make 12.
