Nutrition Tuesday: Quinoa Bowl

Establishing healthy eating habits at home is a key component in improving your on-ice performance. Feeding your body with the fuel needed for every shift will help you seamlessly transition back to the ice when the time comes. Every Tuesday, nutritionist Seanna Thomas will be bringing you recipes and nutrition tips via the GTHL Instagram that will help to build healthy routines. For Tuesday, May 26, Seanna will be making a quinoa bowl – a perfect dinner for summer. You’ll need:

Ingredients:
1 1/2 cups quinoa, cooked
1/4 cup cucumber, chopped
2 tbsp carrots, shredded
1/4 cup black beans
1/4 cup cherry tomatoes, chopped
2 tbsp onions, chopped
1/2 avocado, pitted and peeled
2 tbsp corn niblets
Handful shredded lettuce (optional)

Tahini Lime Dressing:
1/4 cup tahini
1 tbsp lime juice
1 tbsp rice vinegar
1 tbsp soy sauce
1 tsp honey (optional)
Water
